That\u2019s why Youthful have put together a few recipes to help you, and we encourage you to expand on them with your own desires and know-how. You\u2019ll also find some recommendations of highly-inspiring cookbooks and Instagram accounts at the end of the page!<\/p>\n\n\n\n<p><strong>Vegetable fried rice<\/strong>&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Rice (already cooked or to be cooked)<\/li>\n\n\n\n<li>Vegetables of your choice (fresh, frozen, or canned)<\/li>\n\n\n\n<li>Garlic, onion, oil, soy sauce (optional)<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Saut\u00e9 the garlic, onion, and vegetables.<\/li>\n\n\n\n<li>Add the rice and mix well.<\/li>\n\n\n\n<li>Season with whatever you have\u2014salt, pepper, spices, or soy sauce.<\/li>\n<\/ol>\n\n\n\n<p><strong>Hearty salad<\/strong>&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Raw vegetables (tomato, carrot, cucumber\u2026)<\/li>\n\n\n\n<li>A base: rice, pasta, or lentils<\/li>\n\n\n\n<li>A protein: hard-boiled egg, tuna, chickpeas<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Chop everything and mix it all together.<\/li>\n\n\n\n<li>Add a simple dressing: oil, vinegar, salt, pepper\u2014and mustard if you like.<\/li>\n<\/ol>\n\n\n\n<p><strong>Baked (or Pan-Fried) croque-monsieur<\/strong>&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sliced bread<\/li>\n\n\n\n<li>Cheese (grated or sliced)<\/li>\n\n\n\n<li>Ham, tuna, or even leftovers<\/li>\n\n\n\n<li>A bit of milk or butter (optional)<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Assemble your croque with cheese and whatever filling you have on hand.<\/li>\n\n\n\n<li>You can dip it lightly in milk or butter the outside to make it crispy.<\/li>\n\n\n\n<li>Cook it in the oven or in a pan for a few minutes until golden and melting.<\/li>\n<\/ol>\n\n\n\n<p><strong>Ratatouille<\/strong>&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>350g aubergines<\/li>\n\n\n\n<li>350g courgettes<\/li>\n\n\n\n<li>350g bell peppers<\/li>\n\n\n\n<li>350g onions<\/li>\n\n\n\n<li>500g tomatoes<\/li>\n\n\n\n<li>3 cloves of garlic<\/li>\n\n\n\n<li>Aromatic herbs: thyme, bay leaf, pepper, salt<\/li>\n\n\n\n<li>Olive oil<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cut the peeled tomatoes into quarters and slice the aubergines and courgette.<\/li>\n\n\n\n<li>Cut the peppers into thin strips and the onions into round slices.<\/li>\n\n\n\n<li>Heat 2 tablespoons of olive oil in a pan and soften the onions and peppers.<\/li>\n\n\n\n<li>Once tender, add the tomatoes, chopped garlic, thyme, and bay leaf. Season with salt and pepper and let it simmer gently, with a lid on, for 45 minutes.<\/li>\n\n\n\n<li>Meanwhile, prepare the aubergines and courgettes.<\/li>\n\n\n\n<li>Cook them separately or together in olive oil for about 15 minutes.<\/li>\n\n\n\n<li>Check if they\u2019re cooked\u2014the vegetables should no longer be firm.<\/li>\n\n\n\n<li>Add them to the tomato mixture and continue cooking over a very low heat for 10 minutes. Add salt or pepper if needed.<\/li>\n<\/ol>\n\n\n\n<p><strong>Spicy Italian pasta with aubergine<\/strong>&nbsp;<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Onions<\/li>\n\n\n\n<li>Garlic<\/li>\n\n\n\n<li>One or two aubergines<\/li>\n\n\n\n<li>One chili pepper<\/li>\n\n\n\n<li>Passata\u00a0<\/li>\n\n\n\n<li>Pasta\u00a0<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Dice the chili pepper and garlic.<\/li>\n\n\n\n<li>Saut\u00e9 them in a pan with olive oil over a medium heat.<\/li>\n\n\n\n<li>Slice the onions finely and add them to the pan.<\/li>\n\n\n\n<li>Once the onions are nicely softened, add the diced aubergine and salt it to help release moisture.<\/li>\n\n\n\n<li>When the aubergine is tender, pour in the passata.<\/li>\n\n\n\n<li>In a separate pot, cook the pasta in boiling water.<\/li>\n\n\n\n<li>For an extra Italian touch, ladle a bit of pasta water into the pan with the aubergine sauce and let it evaporate.<\/li>\n\n\n\n<li>Once the pasta is cooked, mix it into the sauce.
